Meatless beef substitutes?

So I’m trying to find some good meat substitutes. I have read mushrooms and chickpeas are a good start for texture. Any recommendations for spices to help flavor these? Any other good substitutes?

Aside from soy and other processed "meats", lentils are my favourite substitute. It's great in lentil shepherd's pie.

I made "walnut tacos" from a raw vegan cook book once a few years ago. it was actually really good. it was basically walnuts in a food processor with taco seasoning.
other than that you got;
 tofu (dry it out best you can with a towel, crumble it up, freeze overnight, THEN cook with) freezing tofu changes the texture for some reason. 
lentils (drain water, season however, maybe even food process it)
mushrooms sorta depends on what dish you're making

I use red kidney beans for my bean burgers, but you can use black beans as well. Beyond meat produces a beef crumb as well as other store brands. For fish I mix chickpeas, artichoke heats, old bay seasoning and bread crumbs. I aviod soy products but if you don't mind then you can flavor tofu to any meat flavor.
