Blueberry Muffins (no dairy)! 🍯🤤

Recipe:

Preheat oven to 400 degree f

Sift together:

1 3/4 cup flour

2 tsp backing powder

1/4 cup sugar

1/2 tsp salt

Mix in 3/4 cup of blueberries (defrosted if frozen)

In separate bowl mix:

1/2 cup water

12 tbs oil (canola or vegetable, I use canola)

1 egg

2 tbs honey

Then combine all the ingredients.

Place in nonstick or buttered muffin tin or tin with papers (makes 12)

(Optional step) top with coarse sugar and/or cinnamon to make them sweet, they're not overly sweet when prepared without sugar on top, so if you have a sweet tooth add sugar liberally. (I add both!)

Bake 15 minutes, and enjoy!

(They're dairy free, but I like a bit of butter/butter substitute on top!)
