Advise? gluten intolerance

Hi guys just found out that I have a gluten intolerance as well as IBS, which is always fun! Anyway I wanted to see if any of you have any advise for dealing with either of these since I have no clue

My husband is type one diabetic, not gluten, but weve recently started following the diet just to help lower his carbohydrate intake.
We've been using spaghetti squash instead of noodles, and sweet potatoes and zucchini noodles for noodles. We made cauliflower pizza crust this week that was fabulous (I also heard Trader Joe's makes a really good one), vegetarian chilli, ricing cauliflower (although rice is already gluten free), mixing mashed cauliflower with mashed potatoes, we made eggplant noodles instead of lasagna noodles in our air fryer that were really tasty too. I'm vegetarian so I haven't made him much meat cause it grosses me out to touch it, but he's been eating more chicken recently too to bulk up the meals a bit.

I have celiac it started as an intolerance I follow strict gluten free diet I'm not really sure what advice to give you
