i kind of really want to start eating vegan but my mother is super against it and idk what to do

My parents were against it too, but I showed them many articles about how healthy a vegan diet can be. They're just concerned for your health, and most people are told their entire life that eating meat and dairy is good for them. When you want to do something out of the norm it might make them nervous. Find articles and watch forks over knives with her. She'll come around.

I’ve been vegan for two years and I still have family that don’t support it. There will always be people who don’t agree with something you want but that doesn’t mean you shouldn’t do it. It’s your body your life your choice your morals your health. Whatever reason you have for wanting to transition is your own and no one else’s. I applaud you for wanting to become vegan! The beginning was strange for me and difficult because I didn’t know what I could eat but it gets easier with time. 
-side note I lost 55lbs after transitioning 🙃

I grew up in a very meat heavy South African family with parents who were EXTREMELY anti-vegan and ‘would not allow it while I lived under their roof’. 
When I first brought up wanting to go vegan about 6 years ago they were vehemently against it and I eventually dropped it (but I did start sneaking in vegan meals when it was my turn to cook each week, and they really enjoyed them 😋) 
Flash forward a few years and my entire family went vegan while I was away! They attended a workshop with Tyler Tolman and learnt how beneficial a vegan diet can actually be (as well as how toxic and disease-fuelling a standard non-vegan one can be too). I never in my life thought they’d make the switch but they ended up doing it before me! Makes me wish I’d tried harder to educate them earlier on. 
Maybe suggest watching What the Health and/or Forks over Knives with your parents? They’re great documentaries that discuss the benefits of plant-based living. Definitely worth doing some research and just being able to reassure them you aren’t going to drop dead going vegan 😉 At the end of the day all they want is your health and happiness, and if you an show them that a plant based lifestyle will offer you more of both they might be more accepting of it :) 
At the end of the day however, you’re an individual with the right to choose what you do and what you eat. If veganism is something you feel strongly about, it might be worth simply choosing to start in that journey. Whilst it might be challenging, you don’t need their permission or approval to change what you out into your body and as long as you make sure you’re eating a good variety of foods and getting all your nutrients required then you’ll be in your way to a healthier you! Conflict is always hard, but whatever you decide I’m sure your parents will eventually come around with some gentle educating and care. :) Good luck!
