Of gassing just happens, it's not something that you can choose to do or not do. It's when VOC's (volatile organic compounds) are released from new furniture, paint, carpet, and the like are brought into the home. That new paint, out-of-the-box foam mattress, or new furniture smell are all caused by outgassing.
You don't really want to expose your baby to those VOC's, so set up the nursery or other news space well in advance of the baby's arrival. Keep the area well ventilated, and consider using an air purifier, as well.

Particularly the cot mattress (foam) - put it outside on a sunny day for a few hours each day until it no longer smelt.

I intend to put it all together well before the due date. And if it has any odors, I’ll open the windows for a few days so everything airs out  I don’t see that I’d need to do anything more complicated than that.

It’s not something people can DO. But it is important to prevent  it to the best of your ability.
