Vegetarians: What are the basic ingredients you always have at home?

I'm not a vegetarian myself, but I like vegetarian food. I just don't like to make it, it tends to have too many ingredients which I never have at home (basically I just have dry lentils or beans, sometimes I cook chickpeas and freeze them for salads and hummus). Also the end result often looks the same no matter what you've put in there (chillis and dahls)

So I was wondering, what ingredients do you always keep at home? What are your quick goto meals?
