I mean I know it’s 9.38pm but Ima make pumpkin soup for my family!
Because it’s delicious & too easy!! 😋 😆 🥄 🎃 🥣
I know in the States most of you prefer pumpkin in dessert pies & lattes, but in Australia where I live, pumpkin is more a savoury vegetable we make soup with all autumn and winter, and also roast in olive oil & salt as a side dish. In fact, in Melbourne (where I’m from) at least 50% of the time, soup of the day is ‘pumpkin’ in cafes & eateries.
Pumpkin pies are extremely rare! Here, we eat minced meat pies... with ketchup. Yes, I’m serious. Meat pies are virtually our national dish.
My Irish husband assumed he’d hate pumpkin ANYTHING (just off appearances alone !) until he tried my pumpkin soup.
Oven-baked bacon croutons or ‘bits’ crank it up a notch if you can be bothered to make them (very easy) & sprinkle on top when serving 🥓
Anyway... here are my ingredients & yes, I’m even throwing in leftover roasted herbed potato & sweet potato from dinner earlier.
The only spices (apart from salt & white pepper) are ground cumin and freshly grated nutmeg.
And in terms of ease, the work’s in the chopping. Then it’s nearly ‘set & forget’ for half an hour. Once it’s cooled a little, stick-mixer blitz it and it’s all done! 😁
