NC taxes

We just bought a house and people tell me to get receipts when I donate items, that it will help on taxes. I don't know anything about taxes. Is this true? Is there other ways to "help" on taxes and get more back? I'm looking for fast money, just stuff that I can do threw out the year to help. I live in North Carolina so I'm not sure if it's different in different states. Thanks in advance!
