Would you stay with someone if they admitted to you that they were a past user of meth (but now clean) and abused their last girlfriend, but is actively in counseling, on medication, is clean, and trying to better their life?

There is a man in the UK that has seen thousands of abusers in his clinic, he wrote a book (How He Gets Into Her Head by Don Hennessy). He is an expert. And he has said he hasn’t met a single abuser that has changed. I’d be willing to bet what your man has copped to is a fraction of the actual abuse he inflicted on his victim, and is only playing the “open book” card to garner trust (oh, he was “honest” about his past!) and to test the waters to see if you will tolerate abuse or if you’ll use your brain and run the fuck away and FAST.
