Wood Countertops

We are considering getting wood countertops for our kitchen. We have found products for staining and top coating. What I’m really curious about is realistic expectations and maintenance. What is your experience with wood counters. Is the water accumulation around the sink a problem? Does oil from cooking on the stove cause issues? How about stains from coffee, tomatoes, beets, etc? Also what is the maintenance going to be like? We know what the providers of the wood and oil products recommend. But I would also like to know other’s experience. TIA
