How soon after meals do you test?

So I haven't been diagnosed officially with GD yet (11w3d today), but my OB feels since my A1C was borderline before pregnancy, I should start checking sugars now. 
They told me I should be checking sugars only 1 hour after eating and be under 130. I'm seeing most of you post that you are checking 2 hours after eating. 
Am i checking too early?

I check 1hr after and it needs to be 140 or below. 
2hrs needs to be 120 or below. 
Some people spike at 1hr. 
I test at 1hr because I’ll forget to do 2hr and a lot of times I’m ready to snack by 2hrs.

I have done trial and error with 1, 1.5, and 2 hrs after meals. It seems my highest numbers are usually at the 1 or 1.5 hour mark so that is when I usually test. If my numbers are high I’ll check again at 2hr.

I was told to check either one hour after the end of a meal or two hours after the beginning. If checking 1 hour to expect it to be around 130-140 for normal and 2 hours 120 or less.
