Having a tough time weaning ...

Im looking for some advice and maybe some recommendations. LO turned 1 on the 15th and we have since been trying to slowly wean the breastfeeding. She was exclusively BF for the 1st 6 months, then we started introducing formula after 6 months, mostly during the week when she is at her babysitter and would typically do half formula and half breastmilk bottles. At about 11months I started trying to see if she'd take cows milk, she'd do a couple sips and thats it. So about 2 weeks ago I stopped pumping at work, and had the babysitter start doing half formula and half cows milk, and only breastfeeding her in the evening. But I'm just struggling to tell if I should continue with the cows milk. Since we started switching it up shes had way more dirty diapers then she did before and some of her bowel movements have been extremely loose and not very solid. I'm not sure if this means she's sensitive to it and I should switch to non dairy or not. The pediatrician wasn't too helpful and just said keep trying. She also absolutely refuses to take a bottle of just cows milk, it has to be mixed with formula. And even then sometimes she gags on it and then pushes it away and then shoves her hand down my shirt to tell me what she really wants. And might I add, she does like table food, hates purees always has, but doesn't hardly eat alot, she seems to graze more and wants little bits of food all day, but will not have a solid meal. So needless to say, trying to figure out what she wants and getting her to wean and eat more solid food has been a struggle. And I'm a FTM so I'm just flying by the seat of my pants sometimes it feels like. Do you guys have any advice, and maybe some milk or formula recommendations 🤷‍♀️🤷‍♀️1
