Good vacation places with a 1 y.o?

My husband and I are hoping to go on vacation either in September if things don't shutdown again or within the next year. Our son will be 1 in September so we were looking at either Honolulu or Cancun. Beach places. But the thing is he can't participate in half of the activities we were looking at. Are there any places you traveled to with a child that had good activities they could participate in? How much was the trip and what did you do?
