Not been eating and only lost 26lbs

At the start of October I started not eating for days at a time, then I decided on just very low calorie. I rarely have eaten over 1000 per day, usually around 500-700 but recently over the past week or so it’s been around 250 but I am losing weight super slowly. I was 147lbs now I’m around 121lbs. I’m constantly frustrated because every time I step on the scales I’m expecting the number to be lower than it actually is and although I notice the weight loss it’s not what I’d expect after losing 26lbs. Just venting I’m so frustrated and it makes no sense how little I’ve lost in such a huge calorie deficit😫
