Ferrous fumerate!

I started ferrous fumerate 7 weeks ago and have been taking 1 daily due to having low iron.

I got my bloods repeated and the doctor said my iron was still very low and I was to continue the tablets. On the front of the tablet box it says 1 to be taken daily. However, I went to my local pharmacy as I ran out of my iron tablets and couldn’t pick my prescription up until the following week as I was over visiting my boyfriend. The lady at the pharmacy told me to take 1, 3 times a day. I said whatttt I’ve only been taking 1? She said 1 does nothing and I really should be taking 2 minimum daily.

I’ve been trying to get through to my doctor to ask them this but they are an absolute nightmare and never answer their phone, trying to get a phonecall appointment with them is extremely hard. So guys what do I do? Is my iron still low because I’ve only been taking 1? But then that’s what my doctor recommended? But then someone else told me 2 minimum.

Would you start taking 2 daily? I need to take matters into my own hands if my doctor isn’t calling me back.
