Will the food be ruined in the crock pot?

I leave for work at 7:30am and I don’t get home till 6:30 at the earliest.. most days 7.. so I’m gone for damn near 12 hours 
I’m tired of eating dinner so late and I just want food ready to go when I get home 
I have a crock pot and I want to make birria tacos but I’m afraid after that long in the crock pot that the meat will be like boot leather even on low

Just cook it on low setting.  You could even do it over night and store it in the fridge before you leave so you can heat it up.

I don’t know about your crock pot but mine you can set the amount of time you want it to cook for & then after that time is up it just keeps the food on warm - which generally works out OK. I’ve had some issues in the past w shredded meat burning to the sides (because I was gone and I wasn’t there to stir it) but that also only happens when I cook it on high as opposed to low..

No, for beef, the longer the better in the crockpot.

You should get a crockpot with a timer and it will shut off when it’s done or just add more liquid and keep is on low temp.

If you’re worried, just add a little bit more liquid. But that’s literally what crockpots are for. They are SLOW cookers.

I think it would be fine on low all day, but you could invest in one of the crock pots that has a timer or runs off an app on your phone
