When is it ok to give baby stage 3 gerber baby food

My baby will be 6 months on Tuesday the 25th. I've been giving her stage 2 baby food since she turned 4 months scared to try 3rd stage since it is chunkier.. opinions please

Mix some stage 3 with stage 2.
 At 5 months I did this with stage 1 and 2, now we're fully on 2 but sometimes I mix in stage 3 foods. My daughter does better with the thicker purees.

I go to mom/baby group classes and one day one of the topics was on solid foods. The guest speaker explained that she does not recommend giving babies stage 3 foods. It's more of a marketing strategy than a real purpose for your child. She explained that a mix of solid chunks and purées mix together is hard for baby to figure out when to swallow and when to chew and it ends up being a choking hazard. She reccomended skipping stage 3 altogether and just do either purée or solid but don't mix the two.
