Help! What counts as sex?

Lol this probably sounds incredibly naive and stupid but in all honesty I never received any type of sex education except for "don't do it" as I was homeschooled till year ten and when I went to a private school they didn't teach classes at that level and my parents continue to refuse to tell me anything about sex until the night before my potential future wedding. (I'm not looking to google for help either!) 
So I am turning to you guys for advice...
What counts as sex???
I am 19 and have had a serious bf for over a year now and we are both each other's firsts and are both completely committed to each other and love each other deeply. We both want to wait till marriage before we have sex. That's our decision and our parents are very proud of us. However what they don't know is that over the last six months we have started experimenting with our sexuality (kissing never stays just kissing, especially alone in the dark) and we often dry hump and he fingers me when we make out. Obviously I've learnt lots of amazing things with him and everything that I've learnt about my sexual life has been from him but I guess in the back of my mind I'm always wondering, "How far is too far and does this count as sex or not?" 
Can you please tell me honestly and respectfully if this is sex because I really don't know. I think I should know about sex because I'm a legal adult in a relationship and not knowing anything is more dangerous than knowing everything because I don't know where to draw the line.

Okay, first of all, ignore any rude comments you get on this post!!! Some of the women on here are incredibly rude.

Your question is completely legit, and I will try to answer it the best I can.

Technically speaking, the penis has to enter the vagina for it to be considered sex.  There's debate about if they hymen needs to break for it to be considered losing your virginity. Some women's hymen doesn't break easily.
Sex between a man and a woman though means penis entering vagina.

However, that's not the only type of sex.

There is oral sex, but you can have oral sex and still be a virgin. Oral sex is exactly what it sounds like, it's using your mouth on someone's genitalia.

Also, gay and lesbian relationships define sex differently.

Sexual intercourse/sex is when penetration occurs- AKA the man's erect penis enters the vagina. Technically it means there is the potential for reproduction, although humans have sex for pleasure, not just to reproduce. As another person mentioned, oral sex for a man performing on a woman- would be his mouth on her genitals. For a woman on a man- it's commonly called a blow job(sucking dick, or many other lovely terms for both- lol). Not everyone is into Oral sex- it's a personal preference issue.

Dry humping, fingering, feeling up breasts/nipple stimulation, heavy make-outs are considered foreplay- AKA a precursor to sex- it gets your body receptive for intercourse- so that it's enjoyable & not painful. It does this by increasing blood flow to the genitals- giving the female anatomy heightened sensitivity, & the male an erection(boner/hard on).

The reality is that any time penetration occurs, there is the potential for pregnancy- "pulling out" before the man ejaculates will not protect you from pregnancy (as any natural lubricant the male releases can have sperm in it- it all comes from the same general area). Douching also is not a practical means of birth control & it's simply not healthy for the female genital tract. Barrier Method(condoms or diaphragms) can work well to prevent pregnancy. Then there is chemical birth control: the pill(some allow ovulation while others don't), IUD(IntraUterine Device), Depo Provera shots, Implanon. But you won't need that info until you are married & having sex(talk to your doctor a few months before the wedding, as some methods require tweaking to get right w/ your body chemistry).
