any advice on gaining weight?

My fiance has been vegetarian for 13 years and I have been for 4. We both have trouble gaining and holding weight. does anyone have advice on how to bulk up muscle while vegetarian/vegan??

I started counting calories and eating almost double what is “normal” strictly plant based though no junk food. And adding nut butter, avocado, or coconut oil to almost everything to get as much healthy fat as possible. Gained 18 pounds in 3 months.

Vegan protein shakes + weight lifting - cardio. I consume about 60 grams of protein from shakes alone in a day, most people think they need cardio to bulk and/or burn fat but all you need is a solid weight lifting plan and a cohesive meal plan full of protein and good fats.
