The guy I'm dating doesn't like the way I taste and tbh my diet is traaasssh and I don't  drink that much water like I probably should. Would that fix it?

Yes and no. I have a boyfriend and I’ve asked him. He said the way I taste is not dependent on my diet but that is just me and my genetics. But before he performs oral, I obviously like to shower if I can or clean down there from the days sweat and stuff! I find it’s the same way with my urine. If I don’t have my usual amount of water, have asparagus or food that doesn’t mesh with my intestinal tract, it smells off! Maybe that’s what is happening to you if it’s not your hygiene? Try drinking a lot more water and clean up your diet and see if it helps. :)
