PCOS diet??

I was recently diagnosed with PCOS after an ultrasound and I do not want to take metformin or any kind of birth control because I want to treat it naturally. Currently, I am eating a vegan diet that is around 60% carbs, 20% fat and 20% protein and eating around 2000 calories. Until now I thought that I ate healthily as I consume fruits, veggies, sweet potato fries, brown rice and vegan proteins daily but I'm now learning that a 60% carb diet could be causing the severity of my symptoms and the fact that I have not had a period in 6 months as I have read studies that imply that the only way to treat PCOS naturally is to eat a high protein and high healthy fats, low to no carb diet that is completely unprocessed and contains lean meats. Problem with this is... I'm vegan and healthy carbs are a huge part of my diet (sweet potato, rye bread, brown rice etc.) and I am also struggling to feel satiated and meet my calorie goals (important because I am recovering from an eating disorder) because I do not have enough options. Do any ladies with PCOS have a diet that has helped them to regulate their period/get it back and/or that has helped them to conceive? I'm desperate to get my period back!❤️
