What do you feed your 1yr old?

Hi everyone,
My DS is a very fussy eater and still lives mostly on very smooth purée. This week he has been refusing all purée and wants to only eat finger food but the problem is that he is still being picky about it. He also can’t have dairy. Something he decides to eat today will often be snubbed tomorrow 😩 I’m running out of ideas!
What kinda stuff do you serve your bubs for breakfast/lunch/dinner?

Breakfast: yogurt with fruit, pancakes or waffles with peanut or nut butter and applesauce, oatmeal with fruit & cinnamon, eggs with shredded cheese
Lunch: dinner leftovers with some fruit and veggies
Dinner: whatever we are having as long as it's not spicy (ex: grilled chicken, sloppy Joe's, beans, tacos, quesadillas, veggies, fruit, spaghetti, mac & cheese, rice, ect.)

Definitely good for them to have finger food. A one year old should mostly be eating food they have to chew. Plus it helps them build up their hand/eye and manual dexterity. 
Our son mostly eats what we eat, minus heavy spice. We get a lot of dried fruit snacks and bamba from Trader Joe’s. He doesn’t like meat very much:

An example day:
Breakfast: baby oatmeal with some fruit and veggie applesauce (no sugar added) in it, and a few multigrain Cheerios or half of an English muffin with wowbutter because she likes finger foods.
Lunch: some ripped up turkey meat, piece of soy cheese (milk allergy), slice of toast with coconut oil spread on it, and veggie pear purée I make (she’s picky with veggies unless they are purées).
Dinner: chicken nuggets (or meatballs or spaghetti), and some veggies. Sometimes a bit of pasta with the nuggets. 
For snacks we do her Cheerios, or a fruit veggie bar I get in the baby food section, or cut up apple or banana, or mum mum crackers or puffs.

Answer

Breakfast: Eggs, Toast, Fruit, Waffles, Pancakes, Yogurt, sometimes cereal. 
Lunch: PBJ, Grilled Cheese, Chicken Fingers (fries, nuggets, any shape really), pasta (ravioli, Mac & cheese) mini pizza, fruits, veggies. 
Dinner: Anything we have, but favorites right now are tacos, fajitas, meatballs.
