Weaning age?

DISCLAIMER! I am not saying I'm going to start weaning!!
My baby is 15 weeks old and exclusively breastfed. He was going 2 hrs during the day and 4 hrs during night but the past week or so he has been feeding every hour sometimes even every 40 mins during the day and every 1-2 hours at night. I can tell my supply hasn't dropped but am wondering could he be more hungry or just going through a phase/spurt? What age did you start weaning? I know my HV Said 5-6 months but he just doesnt seem satisfied anymore. Should I try him on some sort of baby rice etc in the coming weeks or just wait it out? I think I'll wait another month but just wanted some advice please. Ps I dont mean stop breast feeding I mean just introducing solids

Honestly he’s probably going through a growth spurt and will grow out of it in the next few weeks. I would continue to feed him whenever he’s hungry and your supply shouldn’t dry up or lessen then. 
You could also try pumping. I know for my son sometimes he would get so hungry and breastfeeding didn’t fill him quick enough that I had to give him a pumped bottle. 
My son is now 1 year and I am just starting to wean him, especially at night

Do not introduce solids until at the Bare Minumum 4 months AND if they meet all the criteria to introduce “solids” (meaning Anything else besides breastmilk/formula).  You can do lifelong damage that way (eczema, obesity, diabetes, and GI issues that may not even show up until later in life).  
It’s normal for babies to go through growth spurts where they want to eat more. It’s so normal they have a term for it. It’s called cluster feeding. 
Most major health organizations recommend waiting until six months to introduce “solids”.

Wean off of breastmilk? Or formula? After a year. I start introducing other foods at 6/7 months. My almost 14 month old is still breastfeeding at night and mornings though.

Introducing solids won't help with hunger, there's more calories in breastmilk/formula than solids. 
Sounds like a growth spurt hun, best thing to do is to ride it out! It will settle back down once baby has established their increased supply level.
 
When you do decide to wean, go for veggies - baby cereal and the like are just empty calories to fill them up without much nutritional value, and rusks are just sugary biscuits! X
