Weight loss plateau after 10lbs lost?

I’m so confused. I’m 5’8 and started at 260lbs. I’m down to 250lbs after very strict calorie counting. I am eating between 1200-1500 calories a day of whole, nutritious food and exercising to create a greater calorie deficit. The scale has not moved in 2 days. How is this even possible? I can’t imagine cutting calories more to get through a plateau after such a short amount of time. Can someone explain what’s happening? I don’t expect to see a pound a day or anything, but just an ounce or something at least every 2 days!
