How does dieting work???

Those who know about this can you please educate me. My SO wants to lose weight (he says he gains weight easily) meanwhile I never understand this because I'm quite lucky that my weight never fluctuates.

He was telling me how much he hates dieting and tries not to eat (just once a day). But I thought that eating 2-3 times a day is still okay, just maybe change what he eats to less carbs etc and go to the gym.

He says that's not how it works and it's 90% diet and 10% exercise. But I thought it meant your diet as in what you eat, instead of starving yourself.

Is it really necessary to torture yourself not to eat? It just sounds excessive to me. Can you give me more insight please
