Vacation meal ideas

We’re going on vacation with my husbands family and I will be responsible for making dinner one night for 8 adults and 4 kids. The other wives committed to tacos and bbq pulled chicken. My MIL is making brisket and said I would do Italian. I’m panicking. It’s a beach vacation so I don’t want to make anything too heavy. It sounds like people are either putting stuff in the crockpot while we’re there or freezing it ahead of time. I need suggestions!!!!
