working moms - dinner ideas?

I just started back at work and I completely forgot what it's like to have dinner planned out ahead of time after a long workday. What are some of your fave easy weekday dinners/recipes?

Turkey burgers and grilled bell peppers @ onions

Grape tomatoes and cauliflower for Salads

Salsa for chips 
Baby Food- spinach and pear
Baby Food - apple sauce and peas

South western chicken

For two Boneless skinless chicken breasts
Shredded cheese
Salsa
Can Blackbeans (drained)
Can corn (drained)
(if more chicken used more corn and beans will be needed)
Sour cream
Salt
 pepper
Oven 350
Flatten meat with tenderizer. Take tinfoil make envelope place one breast in each. Salt/pepper each. Put a row of beans and corn down each breast then a couple spoonfuls of salsa on that. You can put a layer of cheese on but It Can stick to the tinfoil. Place on cookie sheet. Cook for about 45min. Add cheese, sour cream more salsa if needed and put with rice.

Slow cooker meatloaf... i make it with ground turkey. recipe will likely be the first one that pops up on pinterest.  I skip adding the carrots and potatoes, double the sauce and make mashed potatoes to go with it. Takes less than 5 minutes to throw together & is delish/filling!

Sloppy joes! Not the greatest but super easy. Spaghetti, chicken alfredo, tacos. Also if you have a little extra time to throw something yummy in a slow cooker on the weekend you can freeze it and just pop it in the oven to reheat when you get home from work.

Prep dishes on Sunday and you can just throw them in the oven during the week. Crockpot is a huge help too!

I just get a service delivered to my office called Meal Prep.  They prep the food - measure and cut - for each meal and you prepare fresh at home.  The cost is $75 Canadian for a total of 8 meals (2 meals per dish).  Works great for us because often we get 3 servings (versus 2) from each meal and thus hubby has lunch taken care of.  Best part as well is they do organic when they can.  Has saved us both stress, time and money (I was skeptical at first but when I looked into buying the stuff myself and prepping it cost more! My thinking is they get a discount at they buy items in bulk).

When I was pregnant I did a lot of freezer meals which was super helpful. Just put the the fridge the night before so I could either throw into the crockpot in the morning or the oven at dinner time. When I go back to work I plan on doing it again.
