Struggling with eggs... help?!
When I was at my thinnest and fittest, I was vegetarian. No cheese or dairy, but I LIVED for egg whites. I’d eat them with veggies every day for breakfast. Sometimes for dinner! Since becoming fully vegan, I’ve stopped losing weight and even gained a few lbs back. I think because I’ve subbed out the egg whites for tofu scramble, or potato, or chickpeas etc which not only has more calories but it never fills me up the same and I end up hungry again, so I eat something else. (Hence the weight gain!)
I have such strong feelings about veganism but losing this weight is important to me. I feel horrible but I’ve decided to go back to vegetarian to eat egg whites and get back on track. if anyone has any weight loss vegan meal ideas that I could try, maybe I could cut them out again.
