Me (Asian) and my bf (African American) were talking and I mentioned that Asians are people of color and he said they are not. So which is is?

My boyfriend is Asian (Indian) but he’s never referred to himself as Asian or a POC 🤷🏻‍♀️ he’s just like “I’m Indian” and leaves it at that lol

Yup they are. I’m Taiwanese and I refer to myself as a person of colour. For a long time I didn’t until I kept get labelled as a PoC by other ppl so I just accepted it lol doesn’t make a difference to me. Also Oxford dictionary definition:
