Tips for road trip with 8month old?

We are driving 11 hours to go on vacation in June. 
Any tips you can share for traveling?
Would you recommend keeping her infant carrier car seat or upgrading to the convertible one? Would she be able to sleep comfortably in the convertible one?
Would you recommend driving straight through the entire night while LO sleeps? Or try to break it up like 6-7 hours in the evening, get a hotel and then another 4 in the morning? 
We were wanting to fly but that option isn’t working out.. the closest airport is still 2 hours away from our beach house. 
Also any necessities I should get for her being at the pool/beach?

We travel at night with our LO. And with 11 hours, I’d definitely stop and get her out a few times (there’s a two hour car seat rule but sometimes we’d go to three). Our daughter always fell right back to sleep once we started driving again. Id keep her in whatever car seat she’s used to and likes.

A drive that long we alway split over two days, 6 hours of actual driving per day is good for us because with stops it becomes 7 or 8 hours. We stop every 2 hours to give the kids a break from car seats (we always follow the 2 hour car seat rule) and to eat and change diapers as needed. Before kids we would hit a drive thru and eat in the car on road trips but now we take our time and make sure we take longer breaks, get out of the car, stretch, get some fresh air, have a proper meal, etc. it really makes a difference. Even for us adults it makes the trip more enjoyable. 
My first was in his infant seat until 9 or 10 months and was fine, second is a much bigger baby and we switched to convertible at 5 months.

We took our 3 month old on a 9 hour car ride. Left before dinner and had someone in the back seat to feed while I drove. We stopped to change him into pjs and then drove the rest of the way only to stop for gas. He slept the rest of the way. The next day wasn't the easiest for me but i took naps when he did to catch up on sleep.

I’d break it up with frequent stops! I read somewhere that keeping baby in a car seat for too long is not good
