How can I make leftovers better?

I made beef stroganoff mixed with egg noodles for dinner last night and figured I could serve leftovers as a side dish tonight.

When I made it last night, I had to keep it warm for like an hour waiting for my husband to get home and that made it less creamy, and kind of dry, but it was still fine. Now that it has sat in the fridge since last night, I'm sure it's extremely dry.

How can I fix it so it tastes better for tonight? The sauce is a roux, beef broth, cream of mushroom, and sour cream. Maybe just mix some more cream of mushroom in? I'm good at following recipes, just not altering them and fixing it lol
