What would be good side dishes for this?

I will be making roasted potatoes and sausage for dinner. I just cut potatoes and smoked sausage into bite side pieces, season the absolute shit out of them, and then bake them. 
I usually make corn casserole with it, but we want something else with it tonight as well. My husband is an extremely picky eater, so any other veggies are out, along with salad. I was thinking maybe mac and cheese if I can't come up with anything else.

Potatoes and Sausage is a full meal. Only thing that would make sense as a side is vegetables.

I was going to suggest baked asparagus, it’s so delicious with butter, salt and pepper. Sometimes sprinkled with Parmesan. 
A Mac n cheese would be too much starch in one meal.

No need to add anything. Those are both high calorie and potatoes are a starch. Maybe make veggies for you so you get more balance?

He really doesn’t like ANY vegetables??? Time to start sneaking them in. Maybe you can make mashed potatoes and sneak a little cauliflower into them, that’s what I do with my husband.

Sounds like a hefty meal itself, I wouldn’t add mac & cheese. So if you wouldn’t eat vegetables I have nothing to suggest.

Mac would be too much. When I make sausage and potatoes I also throw mixed veggies on the pan. Usually broccoli, cauliflower, whole french beans, carrots, onions, peppers, and mushrooms

i don't think you need to add another side outside of fruit/veg. potatoes and sausages are already pretty heavy. maybe consommé?

The only thing I’d add to that is veggies since it’s already a pretty hefty meal. I’d leave it the way it is.
