Glucose test question

Why does everyone say not to eat carbs or have sugar the day of the test? I understand these things make your blood sugar rise, but I don’t understand everyone’s thought process. If you withhold things you normally eat just to “pass” the test then how do you know that you’ve truly passed? If you’re not diabetic your body should be processing the carbs/sugar and your number should be normal regardless right?
