Carrot Purées

My son is 6 months old today. I plan on talking to his pediatrician about starting solids at his 6 month appointment on Monday. I think the only thing that would hold us up is if his ped wants us to wait for his 6 months adjusted date (almost 7 weeks premature) but I don’t think he will because he’s met all the milestones for trying them.

I am making my own baby food and in my research of best ways to do this, I have come across a few sites saying some doctors advise not to prepare fresh carrots (along with a couple other veggies like beets) because they contain higher nitrates. This was completely new to me. I already bought carrots intending to prepare them and have that be his first veggie. Now I feel I need to check with his doctor, so I don’t even want to take the time to cook and freeze carrots in case they tell me it’s not a good idea.

I’m going to go ahead and hold off and just start a different veggie first until I talk to his doctor, but I’m just curious if anyone else has heard this or been told by their baby’s doctor not to give those fresh because of this?
