I've been doing virgin mojitos (could definitely use LaCroix), dealcoholized wine, and ginger beer a lot as my cocktail substitutes. When I want to be fancier, I've been making sangria with that wine (adding frozen fruit and raspberry lemonade... so good!) or virgin strawberry daiquiris.
