What veggies?

Question

What vegetables are your one year olds or soon to be eating?
Mine doesn't like squash or sweet potatoes or broccoli.  Need ideas on what else to offer.

Peas, carrots, corn, broccoli, green beans, wax beans, beans, kale & spinach if they’re puréed with fruit, avocado (prefers guac)

All are not technically vegetables but these are in his diet
Carrots, spinach, bok choi, morning glory, cabbage, broccoli, asparagus, bell peppers (roasted with olive oil and made into a paste with cheesy mashed potato). Cucumber, green beans, yam bean, Chinese kale, okra (he loves these in lentil soup), edamame (something we all love to snack on), winter melon, peas, Japanese sweet potatoes (purple but the orange ones), white radish and avocados.
Fungi
Shitake, white button mushrooms, portobello mushrooms, white fungus, black fungus, oyster mushrooms, eringi mushrooms, enoki mushrooms, shimeji mushrooms.
We are Lacto-vegetarians.

Green beans, black beans, kidney beans, eggplant, zucchini, potatoes, cauliflower,  carrots, Kale, spinach, yuzu,  parsnip, asparagus, beets, avocado, bell pepper (any color). Literally anything lol. I either steam or grill them usually but I also try to mix them into a "salad" with rice or pasta or leafy greens to give more diversity. Sometimes I'll bread them as well and pan-fry them.
