Gluten-free

I’ve been gluten free for about a month. (I did it to help my anxiety.) If I eat something with a lot of gluten in it for breakfast Saturday, how will it affect me? What will it do to my body and, if anyone knows, what would it do to my anxiety? I plan to go back to gluten-free after breakfast, I just loveeeeee breakfast food and will be in Nashville where there are so many yummy glutinous options
