If before you date someone they’ll tell you they would break up with you? My co worker told me about her boyfriend saying he’ll break up with her before they were officially dating.

100% depends on the context and tone of the conversation.
Before I started dating my other half, I explained to him that if I ever caught him cheating or lying, I would break up with him. I have a zero tolerance policy for that kind of behavior, and it was only fair to let him know on the front end.
When we were engaged, I used to tease that I would divorce him when we were goofing around, he was tickling me... In playful situations.
We're now happily married with a daughter.
I think it really just depends on the couple and situation.

WHY did he say it tho? Was it just out of the blue? Or did she say something that would evoke that response?

Well, I don't think something being temporary necessarily makes it less meaningful or enjoyable. 
But at the same time, I don't think I'd be official or exclusive with someone who said that. Like, I get it, I break up with people too much, it's an actual problem and a joke in my current relationship 🙃 so I know how it is- and I also probably would like that it ends so I don't have to commit 🙃 
But, yeah, I can't see myself taking the relationship seriously enough to actually officially date them! Unless they were super cool. I'll short term date a cool person publicly sure 😹
