Heart attack Chili
Making this tonight because it was below freezing this morning and that has never happened this early in the season. It was such a beautiful cool day with very low humidity, so I broke out my big pot and made some chili!
4.5 lbs ground beef
2 cups of water
1 12 oz bottle of Shiner Bock (Beer)
1 large sweet onion, chopped
2 green bell peppers, chopped
1 large jalapeño, chopped
2 cans rotell (10 oz)
2 cans pinto beans (16 oz)
1 TBSP red pepper flakes
2 TBSP chili powder
1 TBSP cayenne
2 TBSP cumin
1 TBSP garlic powder
1 TBSP tomato paste
1 cup raw honey
Salt & pepper
Sauté onions first, then start adding everything else. Bring to a boil, and reduce to a just below a simmer for about 30 minutes; then let it rest for about 15! Served with homemade cornbread and saltine crackers.
