How can you tell him you just aren't in the mood in the nicest way possible

It's easy. "Sorry babe, not right now."
That's it. You don't owe an explanation, and you don't have to do anything you don't want to do.
If I don't feel like it, I say so. If he doesn't feel like it, he says so. Neither one of us takes it personally, because let's face it: no one is in the mood 100% of the time.

I rairly turn him down, and im usually the one instigating sex, but when I have had to say no, I just let him down gently and suggest we watch a movie and snuggle instead. It's perfectly fine to just say no. If hes a good guy he'll just drop it and move on to something else.
