People of Color

Does anyone find the phrase people of color offensive? Everyone has color in their skin and it makes me upset that any who isn't white is referred to as person of color. I don't like being called a person of color. I would much rather be called Hispanic or Latina. What are other ways to refer people's diversity of ethnicity instead of people of color.
