Cooking question!

I made some sandwiches to keep in the freezer for a quick and easy lunch at home. They are like the tomato and mozzarella paninis from Starbucks.

Ciabatta rolls with pesto, sun dried tomatoes, fresh spinach, and a slice of mozzarella cheese.

I just cooked my first one today. In the oven, from frozen, at 350 for 10 minutes. The cheese wasn't completely melted, so I put it in for another 3 minutes. The roll was way too crispy though, even just after the 10 minutes, so I put it in the microwave for 30 seconds to soften it a bit.

I'm wanting a semi-soft roll with a little crisp on the outside. What adjustments do I need to make when heating it up?
