What To Cook With Picky Eaters?

Can you guys help me develop a meal to cook today? My niece is the world's pickiest eater. It stumps me when I have to cook because I make sure I incorporate most of the things on the food pyramid. Fruits, Veggies, grains, meats, dairy. Any help? No spaghetti because we cooked that 3 days ago

Why not do a pick n mix platter: grill some chicken/ fish
Chop vegetables in different small bowl
Cut tomatoes and mozzarellas in same bowl
Cut avocados
And serve with a pitta so everyone can choose what they eat

Wraps - with all ingredients laid out so you can choose your own filling. 
Pizza - grate all the vegetables like carrot and hide it in the pizza sauce

This is what my mom did with me and my beother and what we do with our son
You eat whats cooked for the entire house to eat or you go to bed hungry or if youre old enough to find something on youre own the so be it 
We dont cook separate things unless its a fend for yourself night then its whatever you have a taste for
