The best comfort meal (not cheat meal)

So thanks to Corona Virus both my jobs are closed for 3-5 weeks and my boyfriend’s school is closed for 2-5 weeks.

So back home we came for a few weeks and its all rainy and gloomy here so we wanted comfort meals. But still wanted to stay healthy so we have this!

Vegetarian chili and Kale watermelon feta Salad with lemon balsamic vinaigrette

I topped the chili with half an avocado and a few dashed of Louisiana pepper sauce 😋

Recipe: chili

1 can black beans (drained 3/4 of the way)

1 can pinto beans (with juice)

1 can kidney beans (drained 3/4 of the way)

3 tbs tomato paste

1 package of chili seasoning

3-6tbs onion finely chopped (up to you how much)

2-3 garlic cloves finely minced or crushed

2 tsp garlic powder

Couple shakes of smoked paprika

Couple shakes of chipotle powder

Half a Mexican beer

-Sauté onion and garlic til onion is translucent and garlic is fragrant.

-Add tomato paste to pan along with seasoning packet and cook for 40 seconds to darken and deepen seasonings.

-Add beans to pan and other seasonings.

-cook down 10 minutes

-Add half Mexican beer and cook over medium low heat 30 minutes stirring occasionally.

-serve with avocado and hot sauce optionally 😁

Kale watermelon feta Salad Recipe:

Half seedless watermelon cubed in small bits

1 bunch of kale stripped from stems broken down and thoroughly washed

1 small container of feta (8-16 oz you do you)

1 small lemon

Olive oil

Balsamic

Salt

Pepper

-add lemon juice, olive oil, balsamic, salt, and pepper to kale pieces.

-add watermelon bits

-add feta

-let sit for 10 minutes to overnight (I like to let sit overnight to soften the kale)

-enjoy!
