Baby led weaning questions

Ok so my baby gags and vomits when he self feeds. I saw recommendations on another post that you should use toast or a chicken wing etc but that’s not safe for my baby! He has all his front teeth, and they are so sharp that he draws blood if he tries to bite my finger! he’s a strong biter. He cannot chew and swallow big chunks of meat or pieces of toast or celery or a broccoli stem etc. They get stuck in his throat and he pukes. Sooo what do I do about it? It seems the assumption is babies can only chew on these foods to train the gag reflex, but not bite off or swallow them, BUT this is not the case for my baby, his front teeth bite off massive chunks that get stuck in his throat and he chokes or gags. I have had to do back blows multiple times and this whole baby led weaning thing is just not working for us. Regardless of what I feed him, he picks it up takes a massive bite and tries to swallow it. He does amazing with purées on a spoon and he chews the spoon every time so it’s not like he’s just used to swallowing purées, but I’ve barely don’t purées bc I thought you were supposed to avoid that with blw but it’s the only thing he eats properly. Even teething biscuits he bites half off and before he has the chance to chew it down enough to mix with his saliva it’s stuck in his throat. Anyone have ideas?? Should I go the traditional route instead?

Oh and also he has tons of teething toys and he’s ALWAYS chewing on them and pushing them in his mouth, even silicone straws and toys that go back in the mouth. If there’s no toy in his hand he’s chewing his hand and shoving the whole hand in his mouth lol. He’s always done that. The problem seems to be chunks of food that he doesn’t know how to chew down to a puree in the mouth yet so he can safely swallow them.
