Double thickness Peanut Butter cookies.

1 cup peanut butter

1/2 cup butter (softened not melted)

1/2 cup white sugar

1/2 cup brown sugar

1 egg

1 1/2 cups plain flour

1 tsp baking soda

1/4 tsp salt

1 tbsp vanilla extract

Preheat oven to 350F. Line to trays with parchment paper.

In a LARGE bowl, cream together the PB, butter, and both sugars. Beat together until smooth and creamy.

Add the egg, vanilla extract and continue to mix until we'll combined.

In a medium bowl mix together the flour, baking soda and salt. Fold the flour mixture into the wet ingredients combine well, make sure you get all the flour from the bottom.

Add a bit of milk if it is abit dry and crumbly.

Then with and ice or cookie scope, scope the mixture into balls and place on the tray.

Using a fork, press down on each one to slightly flatten it and create a criss cross pattern.

Baje for 6-10 minutes.
